Banana Pancakes

Dude, so easy, so good, and no utensils necessary?  Count this crew in.  This recipe has been a staple for years for my family.  Get into this crazy easy Banana pancakes recipe.  All the flavor with zero guilt.  We make these anytime of the day for a quick protein and sweet boost!

2 eggs*

1 banana

Cinnamon to taste

Mash the banana with a fork until there are no lumps. Add the eggs and cinnamon and mix until incorporated.  Cook on medium-low just like you would a pancake!!  Done and done.

(You can always put all the ingredients in a blender instead of mashing with a fork- I just like to customize the consistency).

*NOTE ON EGGS:  Please do not be afraid of eggs!  Eggs get such a bad rap, but they are so good for you because they are very nutrient dense.  For only 70 calories per egg, you get 6g of protein, no carbs, and 5% of your daily value of vitamin D.  Keep in mind, a large percentage of all this goodness is in the yolk only, so eat the whole thing without worrying about the naturally occurring fat!
