Just like most other people, ya gerl loves a muffin. But conventional muffins are not healthy. They just aren’t. It’s like cake for breakfast, people. But these are the best, most satisfying, and healthiest homemade muffins I have tried. They are perfect for everyday, every time of day, and most importantly, kids! Oh yeah… and they are ridiculously easy to make. You only need a blender and a muffin tin. And they are very easy to make gluten-free by simply using gluten-free oats*. Btw, not all my recipes are original. I typically adapt them to our family!
*A NOTE ON AN OAT:
Oats are a naturally gluten-free grain. The reason why oats come regular and gluten free that oats are typically grown next to grains with gluten (like wheat). So it is a cross-contamination issue. Therefore, if you don’t have a true gluten allergy and are only sensitive to gluten or choosing to exclude gluten from your diet, you should be fine with regular oats!

Flourless Banana Blender Muffins (adapted from lecremedelacrumb.com)
2 cups old fashioned oats
2 eggs
2 medium bananas
1⁄4 cup brown sugar
1 1⁄2 teaspoons baking powder
1⁄2 teaspoon baking soda
1 teaspoon vanilla
1⁄4 teaspoon salt
1 teaspoon cinnamon
1⁄2 cup whole milk yogurt
Preheat oven to 375. Grease muffin tins or place muffin/cupcake liners in the tins. Add all the ingredients to the blender, blend, fill muffin cups, and bake for 15-20 mins. That’s it, you’re done.
