It’s Taco Tuesday… my favorite day of the week. I mean, who doesn’t love a good taco? And as a mom, I appreciate how completely easy it is to make, easy to clean up, and how everyone in my family will eat them.
I used to buy a seasoning mix, until I realized that I could just do it myself and make it taste great. Mixes are fine in a pinch, but most of them have too much salt and preservatives. (Trust me, this tastes even better than the mixes out there.). Some nutrition tips:
- If you like and can eat red meat, buy it organic and pasture raised if you can. It is better for the land, animals, and you!
- Try to mince your garlic first and let it sit out for 15 mins to release all the active component “allicin” which has amazing anti-bacterial and anti-microbial functions.
- Chili, like all other spices, is great for you because it is really high in antioxidants. Fight those free radicals!
1 lb ground beef (or a 16 oz can of black beans)
⅓ medium onion, diced
1-2 cloves garlic, minced
1 tbsp avocado oil (or whatever you have)
1 tbsp chili powder
1-2 tbsp your favorite red sauce (I do Rao’s)
Heat oil in a sauté pan or skillet. Add onion and garlic and cook until fragrant and translucent, about 1-2 mins. Add chili powder and mix with the onions and garlic until well blended. Then add the ground beef and cook until browned and mostly cooked through. Then add the red sauce, turn the temperature to low and bring to a simmer for a few minutes until the meat is soft and cooked through.
I use the siete brand tortillas (either hard or soft) as they are a great grain free option that my whole family loves.
Make sure to chop up all of your fresh toppings like lettuce, avocado, tomatoes, and lime. Rock out on those because it is like having a salad with your taco and it tastes amazing!!
